- Coconut milk (or coconut cream)
- Chili powder
Cooking time: 1 hour 30 minutes
Prepping time: 30 minutes
Total cooking time: 1 hour 30 minutes
- Wash the rice and cook it in a rice cooker
- Peel and dice the mango
- Mix the cooked rice with the diced mango
- Mix in the spices and salt
- Serve warm or cold

To prepare this tasty rice dish, you’ll need:
- 1 cup white long-grain rice (uncooked)
- 1/2 teaspoon salt
- 1 tablespoon vegetable oil
In a medium saucepan over medium heat, add the uncooked white long-grain rice and cover with about 3 cups of water. Bring to a boil then reduce heat to low and simmer until all liquid has been absorbed by the grains (about 30 minutes). If using frozen spinach or kale instead of fresh greens for added nutrition boost then leave out step 2 completely since those ingredients won’t need any cooking time at all when added directly into other ingredients rather than being cooked separately beforehand like we did here today 🙂
